品飲筆記:傲雲 2020 來自高山,前調有成熟黑果、礦石與溫暖香料,接著轉為煙草、雪茄盒與可可粉的細緻香氣。口感清爽有彈性,酸度明亮、果汁感充足,單寧清新而有存在感,結尾纖細但悠長帶一點緊緻感。 釀造與田地:酒莊位於海拔約2200–2600米的斜坡梯田,314塊小地塊合計近28公頃,世代耕作的在地農戶以人手採摘,保留山地特有的精緻與礦性。 釀酒筆記:首席釀酒師根據稀薄高海拔空氣調整作業,增加浸皮時的曝氣、延長浸皮時間,並在新橡木桶與透氧的陶甕中進行蘋果酸乳酸發酵,減少二氧化硫的使用。陳年約12個月(30%新桶、30%舊桶、40%四川石甕),讓酒既有層次又保有清新活力。 建議醒酒60–90分鐘,配燒烤羔羊、烤牛排或香菇類料理最合拍。

Tasting Note: A poised, mountain-born red with an elegant nose of dark berry, graphite and warm spice leading into layers of tobacco, cigar box and a dusting of cocoa. The palate is bright and juicy, with taut acidity and fresh, present tannins that give fine structure and long, nervy persistence. Producer & Vineyard: Crafted by Ao Yun under Moët Hennessy, this 2020 comes from 314 high‑altitude plots across nearly 28 hectares between 2,200–2,600 m. Steep terraces tended by local growers and entirely hand‑harvested bring a marked precision and mountain energy to the wine. Winemaking & Ageing: Under winemaker Maxence Dulou the vinification is adapted for altitude—extra aeration during maceration, extended skin contact depending on site and vintage, with malolactic fermentation in both new oak and oxygen‑permeable earthen jars. The wine spent 12 months aging (30% new barrels, 30% old barrels, 40% stoneware jars) with restrained SO2, preserving freshness and terroir expression. Serve: Decant 60–90 minutes to let the layers open. Best enjoyed with roasted or grilled meats, savory mushroom dishes and aged cheeses.

Ao Yun is a high‑altitude project owned by Moët Hennessy, focused on capturing the unique mountain terroir of Shangri‑la in Yunnan. The estate works with 314 individual plots across steep terraces and employs traditional local know‑how alongside modern winemaking. Winemaker Maxence Dulou adapts techniques to the altitude—special aeration regimes, selective maceration and the use of both oak and earthen jars—to preserve freshness and minerality.
