Tasting note

來自香格里拉高海拔山坡的作品,香氣深沉而有層次:黑色果實、黑橄欖和煙草的陳年味先行,隨後浮現辛香、可可粉和礦物氣息。口感飽滿、濃郁,但不失細緻,粉砂般的單寧與鮮明的酸度交織出清晰的結構,尾韻持久且有垂直感。 酒莊與田間:傲雲由 Moët Hennessy 持有,在海拔2,200–2,600米的山地上管理314塊小地塊、近28公頃的葡萄園。當地農戶世代耕作,陡坡梯田與特殊微氣候讓果實展現高海拔風土的精緻度;採收全以人工進行,尊重當地傳統。 釀造小細節:釀酒師 Maxence Dulou 會因應稀薄空氣調整工序——加強浸皮時的曝氣、視園地與年份延長浸皮時間、在新橡木桶與透氧的陶甕中進行乳酸發酵,並減少二氧化硫使用。陳年約12個月,保留了果實的能量與礦物張力。建議醒酒約90分鐘,適合搭配烤羊、紅燒牛肉或味道厚重的起司。

This high-altitude red from Shangri‑La is concentrated yet refined. Aromas of dark currants, black olive and cigar-box segue into notes of paprika, dark spices and a dusting of cocoa. On the palate it is full-bodied and powerful, with polished, dusty tannins, bright supporting acidity and a vertical, ample finish. Produced from a mosaic of small mountain plots, hand-harvested and vinified with altitude‑aware techniques, the wine shows precise definition and mineral lift. Producer notes: Ao Yun (owned by Moët Hennessy) works with local farmers across 314 plots totaling nearly 28 hectares at 2,200–2,600m. Winemaking (Maxence Dulou) adapts to thin mountain air with increased aeration during maceration, extended maceration when warranted, malolactic fermentation in new oak and oxygen‑permeable earth jars, reduced SO2 and 12 months of oak ageing. The result is a terroir-driven, ageworthy wine with both power and finesse. Serving: decant about 90 minutes. Pair with roasted or grilled lamb, richly sauced beef, game birds or mature cheeses.
