This bottling from 風の森 (Kaze no Mori) is a lively, unfiltered, unpasteurized and undiluted release—Zaruri-dori (scooped directly from the moromi) that preserves vivid primary aromas and the full texture of the mash. On the nose: bright orchard fruits, citrus zest, white flowers and a faint tropical lift. On the palate: energetic acidity meets a creamy, almost silky mid-palate with savory umami and mineral tension. The unfiltered, nama genshu style gives the wine a broad, rounded body and a lively, youthful fizz that lifts the finish. Produced in small batches with minimal intervention, this is a sake for those who enjoy bold, fresh character and a mouth-filling, food-friendly profile. Serve chilled or lightly warmed; a brief 10–20 minute rest after opening helps the aromatics open up.
