Tasting note: A richly concentrated Premier Cru with expressive aromas of lemon zest, ripe pear and white peach, layered with toasted almond, honeyed stone-fruit and a fine flinty minerality. On the palate it shows a creamy, almost buttery texture tempered by vibrant citrus acidity and crisp saline persistence. Oak influence is present but well integrated, contributing spice and length rather than dominance. Producer notes: From the Picard family’s Domaines Famille Picard holdings, this cuvée comes from the unusual Prima Vinae site that includes parcels sitting on particularly fine limestone—partly Grand Cru in nature and partly Premier Cru. The estate is known for precise vineyard work and a traditional Burgundian approach married to modern cellar care. Winemaking notes: Grapes are harvested selectively and handled with care to preserve aromatic lift. Fermentation and maturation take place primarily in French oak, with a portion in new and second-fill barrels to add structure and subtle spice. Lees ageing and gentle bâtonnage build creaminess and mid-palate weight while allowing the natural acidity and minerality to remain central. Vineyard notes: Les Demoiselles sits on steep, well-drained limestone slopes with good exposure, producing low yields and highly concentrated fruit. Soils impart pronounced mineral tension and a saline finish; canopy and yield management aim to concentrate flavours while retaining acidity and elegance. Cellaring & service: Already showing generosity yet built for aging—best enjoyed from the mid-2020s through the early 2030s. Serve chilled (11–13°C) and consider a 45-minute decant to open florals and mid-palate richness. Food pairing: whole roast poultry, richer seafood, and mature cheeses.
