酒廠介紹:康笛龍是布魯塞爾著名的自然酸釀作坊,世代經營、堅持傳統自發發酵與人工混配,少量生產,重視時間與陳年,成就穩定且個性鮮明的酸啤風格。

釀造工藝:以大麥與小麥為基礎,入桶自然發酵並在橡木桶中長期熟成,經不同年份發酵品的混配達到鮮果與陳年風味的和諧。瓶內二次熟成保留細緻氣泡與活力酸度。

田野與來源:這款酒的風土來自釀坊周邊的穀田、水源與空氣中的天然菌群——冷卻槽捕捉的野生酵母與乳酸菌、老桶的微氧環境,還有鄰近果園帶來的果香印記。整體語氣俐落、帶田野感與手工溫度,適合喜歡自然酸與微妙風味層次的品飲者。


Tasting Note: Pale pink to soft copper in the glass with a fine, persistent mousse. Aromas open to rose petal, fresh raspberry and cherry, lemon zest and a distinct farmhouse funk. On the palate it is brisk and bone-dry—explosive acidity carries bright red-fruit notes, a saline minerality and delicate oak complexity. Effervescent texture accentuates the tart finish, which lingers with floral and yeasty echoes.

Producer Notes: From the famed Brussels lambic house, this release bears the hallmarks of traditional Cantillon craftsmanship: small-scale, family-led production that honors spontaneous fermentation and time-honored blending. Bottles are handled with care to preserve vivacious acidity and nuanced barrel character.

Winemaking Notes: Brewed with pale malts and wheat, matured in oak barrels and allowed to undergo spontaneous fermentation in the open air. Blended from different-aged lambics to achieve a balance of fresh fruit brightness and rounded aged complexity. Secondary conditioning in bottle adds fine carbonation and integration.

Vineyard / Field Notes: Rather than vines, the character comes from local cereals, well water and the microflora of the brewery itself—coolship-captured yeast and bacteria, long oak ageing, and the terroir of nearby fields and orchards that influence the fruit-forward aromatics. The result is a wild, terroir-driven sour beer that feels both rustic and precise.
