Soul Hook: A biodynamic grand-cru Champagne with vivid citrus nerve and a creamy, saline finish. Winemaking & vineyard: De Sousa harvests from three grand-cru villages (the '3A'), uses biodynamically farmed grapes with Demeter certification, ferments base wines in oak barrels and builds the cuvée from a recent base vintage plus perpetual reserve. Disgorged with a low Brut dosage to keep it dry and focused.
