Chateau Canon’s 1982 is a mature Saint-Emilion Grand Cru that shows the classic evolution of a top Bordeaux vintage. The colour is brick-core with an amber rim; the nose unfolds in layers — tertiary notes of truffle, tapenade and leather interweave with red-berried and dried-fruit aromas, hints of plum, quince and subtle floral and stony accents. On the palate it is silky and supple rather than aggressive: well-structured with good body and an impressive architectural balance, ultra-fine tannins and a long, contemplative finish. Producer & winemaking notes: Canon applies meticulous plot-by-plot management and manual sorting in both vineyard and cellar. Grapes are handled gently in a gravity-flow fermentation room and parcel selection is strict. The wine matured for 18 months in French oak barrels, contributing subtle spice and integrated oak texture while preserving the wine’s tertiary complexity. Vineyard notes: From a Premier Grand Cru Classé B estate in Saint-Emilion, the vineyards are carefully tended with an emphasis on terroir expression; soils and exposure produce wines that age gracefully and develop layered, savory character. Service & pairing: For a bottle of this age, decant about 30–60 minutes (we recommend ~45 minutes) to let tertiary aromas lift. Match it with richly flavoured red meats, game, roast lamb or aged cheeses to complement its truffle, leather and dried-fruit profile.
