品飲筆記:2003 年的這支寶嘉龍呈現深沉的黑色果實風格,前段有黑醋栗與黑李的濃郁果香,隨之而來的是甘草、香氛與細緻花香。口感飽滿且有豐厚的油脂感,質地圓潤如甘油般滑順,單寧仍然結實但經過時間變得更細緻,尾段帶有煙草、巧克力與泥土氣息,餘韻悠長。酒莊與田間:作為二級名莊,寶嘉龍坐落在接近加龍河口的礫岩丘地,潮汐對氣候有調節作用,減少冬季寒害並緩和夏日高溫;2003 年夏季炎熱且產量偏低(約 35 hl/ha),因此果實格外集中。釀造與陳年:人工採收、嚴格篩選,傳統發酵後在法國橡木桶中陳釀約 18 個月,釀酒過程中包含近 50 道人工處理以確保品質。建議醒酒 1–2 小時以去除沉澱並讓香氣打開;搭配烤牛排、鹿肉或成熟硬質起司能更襯托其結構與風味。這支酒現在已步入成熟期,但仍有數年發展空間。
Tasting note: A deeply colored Saint-Julien showing concentrated dark-fruit aromas of crème de cassis and ripe black plum, lifted by licorice, incense and subtle floral notes. On the palate it is full-bodied and opulent, with a plush, glycerin-rich texture, polished but present tannins and an impression of mocha and tobacco on the long finish. Producer notes: Classified 2ème Cru, Château Ducru-Beaucaillou benefits from Bruno Borie’s stewardship and the estate’s prized gravelly slopes near the Gironde estuary. Vineyard notes: The vineyard’s proximity to the vast estuary and the daily tides moderates extremes of temperature, reducing winter frost risk and softening summer heat; yields in 2003 were low (≈35 hl/ha), producing an intensely concentrated wine. Winemaking notes: Hand-harvested fruit undergoes meticulous sorting and traditional vinification followed by 18 months of élevage in oak; about 50 manual interventions contribute to the crafting of the grand vin. Service & ageing: Already entering a drinking plateau, decant for 1–2 hours to settle any sediment and open aromatics. Cellar potential remains — drink now to 2038–2042 for additional development. Food pairing: Best with rich red meats, game and mature cheeses.
