The 2019 Chateau Les Carmes Haut-Brion is a stunning wine from the Pessac-Leognan appellation in Bordeaux. This wine opens with an enchanting bouquet of flowers, smoke, tobacco leaf, herbs, sea-salt, blackberries, plums, and forest leaf aromas. On the palate, it is silky, intense, fresh, elegant, deep, and sensuous, with a multi-layered and seamless finish that lingers. Crafted with a blend of 42% Cabernet Franc, 27% Merlot, and 31% Cabernet Sauvignon, this wine has been aged in a combination of new oak barrels, foudres, and terracotta amphorae for 18 to 24 months. The vineyard, with an average vine age of 42 years, is planted on Mindel graves on clay and limestone soils, contributing to the wine's complexity and balance. Decant for 1 hour and enjoy with dishes like filet of beef Wellington, braised lamb shank, filet mignon à la bordelaise, duck breast, or roast beef with jus.
