Château Sociando-Mallet 一直走自主路線:收成分三週手工完成,120 名採摘隊把果實完整送到酒窖。發酵時以本土酵母進行,常用抽皮法(pump-over)以萃取顏色與單寧;之後入桶陳 12 個月。酒園位於 Haut-Medoc,排水佳,受海洋微氣候影響,果實成熟但保留清新酸度。

深色果實先入鼻:黑加侖、黑梅、帶點黑巧克力與石墨調;木質香淡淡鋪陳。入口很有份量——單寧紮實、礦性明顯、酸度支撐整體結構,尾韻帶微酸櫻桃的收束。現在喝要大力醒(建議 2 小時),若再藏 5-10 年會更圓潤。

【Winemaker & Vineyard Notes】
Château Sociando-Mallet vinifies traditionally: harvest by hand over three weeks with a crew of 120 pickers, native yeasts, stainless-steel and concrete vats, and daily pump-overs to extract colour and tannin. Matured in oak for about 12 months. The estate sits in the Haut-Médoc with well-draining gravelly parcels and a maritime influence that gives freshness to the ripe extract.

【Sommelier private notes】
Opaque ruby-black core. Aromas of cassis, black plum, dark chocolate and graphite, edged by cedar and subtle oak spice. On the palate it’s dense and tightly wound—powerful tannins meet a clean mineral spine and a lingering, slightly sour cherry finish. Needs coaxing: decant at least 2 hours if drinking now, or cellar further for integrated softness.
