Description

PATRIMONY’s signature Cabernet Sauvignon returns with the masterful 2022 vintage. Dark crimson-ruby in color, this wine offers a generous bouquet of strawberry, cherry, cocoa and cigar box with suggestions of clove, bay leaf, juniper, white sage, pie crust and sweet oak. The palate impresses with massive structure, unleashing meaty flavors of red fruit, cassis, cedar, baking spice and black pepper. With refined acidity and beautifully integrated oak, it finishes with extraordinary poise, depth and staying power.

品飲筆記:酒體飽滿,黑莓與野莓香氣先行,帶有橘皮的清新提振,隨後出現煙草、皮革與石墨的鹹香與礦質感。口感結構分明,酸度活躍、單寧細緻卻堅實,餘韻長,帶有烤肉與香料的回味。 酒莊與田地:達歐位於高山,風冷、晝夜溫差大,讓果皮和單寧發展得很棒。釀造 Patrimony 的果串只取田裡最頂級的藤列,採收前會大幅限產並在分級後只使用自由流出汁。 釀酒工藝:全程採用山上自生野菌發酵,強調天然酵母帶來的質地與地域風味。30 個月的法國頂級橡木桶陳年,重點在於桶香與果實無縫整合,為酒帶來複雜度卻不蓋過山地本色。 口感印象:入口飽滿、齒頰留香且有明顯礦氣與肉香,適合與油脂或烤味重的菜餚搭配,一杯慢慢醒來會展現更多層次。

Tasting note: Dense, layered dark fruit opens to wild blackberry, bramble and a lift of orange zest, while savory tobacco, leather and graphite build through the mid-palate. The palate is full-bodied with bright acidity and finely integrated yet firm tannins, finishing long with roasted-meat and spice echoes. Producer notes: From DAOU Mountain, Patrimony is selected from the estate’s most concentrated rows. Yields are aggressively thinned and fruit is optically sorted so only the free-run juice of top clusters is used. The wine showcases the mountain’s famously high phenolics—depth, color and structure are priorities. Winemaking notes: Fermentation is carried out exclusively with native yeasts cultured on DAOU Mountain to preserve a sense of place and native texture. The wine was matured for 30 months in a rigorously selected set of French barrels chosen for seamless integration, delivering complexity without overwhelming the fruit. Vineyard notes: The vines sit high on DAOU Mountain where cool nights and wind-driven diurnal shifts intensify phenolic development and concentration. Only selected rows meeting exacting ripeness and structural criteria are harvested for this cuvée, producing a wine built to age yet balanced and fresh.
