The mousse is fine and creamy; acidity is bright and nervy, driving a mouthwatering mid-palate. Secondary aromas of aniseed, crushed mint, espresso and a suggestion of crème de cassis add complexity, leading to a long, saline-tinged finish. Producer notes: Dom Pérignon (LVMH) describes 2008 as a vintage of exceptional balance — riper fruit than expected yet with steely clarity. The house tasting highlights aromatic purity, depth and a warm, athletic character that now shows integrated acidity and pronounced aromatic persistence. Winemaking notes: Made by traditional method with careful lees ageing and a Brut dosage, the wine benefits from meticulous cellaring before release. The production emphasizes precision during harvest and extended bottle ageing to knit together autolytic brioche notes with fresh citrus and mineral tension. Dom Pérignon is the prestige cuvée of the Moët & Chandon house, managed within the LVMH group. Named for the 17th–18th century Benedictine monk credited in legend with advancing sparkling wine techniques, Dom Pérignon is crafted under the close supervision of the cellar team. Long-standing cellar practices, careful selection at harvest and prolonged ageing produce wines noted for their precision, autolytic complexity and long ageing potential. Richard Geoffroy, long the voice of the house, shaped the late‑20th and early‑21st century style; the current cellar team continues that attention to balance and finesse.
