這款2004年P2屬於唐培裡儂的第二巔峰期:在瓶中長時間熟成讓香氣與結構更為豐富。聞得到檸檬皮、青蘋果與成熟的白肉果香,交織出烤麵包、榛果、咖啡和些許黑巧克力的複合調性。口感中等偏厚,細緻而持久的氣泡為整體帶來優雅節奏,銳利的酸度帶出清晰線條,礦感與微微的澀感增加了口腔的張力與精準度。低劑量保留了鮮明活力,於大酒杯或稍微醒30分鐘能更好展現層次。生產上以傳統法泡製、長期瓶內接觸酒泥(sur lattes),來自香檳優良產區的冷涼與白堊土壤賦予典型的礦性與耐久性。整體輕盈而有力量,適合搭配海鮮或有些厚度的奶油料理。

2004 Dom Pérignon P2 (Plénitude 2) represents the second life of an iconic vintage: extended time on lees (around 15 years) has intensified aromatic complexity and structural depth. On the nose it unfurls citrus peel, ripe orchard fruit and stone fruit, layered with toasted brioche, hazelnut, coffee and gentle dark chocolate notes. The palate is medium‑to‑full, with a wide, expansive attack, incisive acidity and a classically fine, persistent mousse. Saline minerality and subtle phenolic grip lend precision and length, while a restrained Brut dosage preserves vibrancy and longevity. Producer notes stress that Plénitude 2 elevates the wine’s energy—wider, deeper and more intense—rewarding air and a large glass. Made by traditional method and disgorged after prolonged sur lattes ageing; best enjoyed slightly opened with food to showcase its textural richness.
