這是一瓶來自唐培里儂 2006 年的 P2(Plénitude 2)再釋放:經過長時間瓶內陳年與酵母桶上熟成,香氣變得更有層次。聞起來有烤麵包皮、白巧克力與一絲棉花糖的甜感,接著透出檸檬皮、柑橘與鳳梨的清新果芯;隨著空氣流動,海洋礦物、牡蠣殼般的鹹香與微微核果的風味也慢慢浮現。 口感上屬中偏飽滿,入口寬闊但清爽有力,酸度鮮明切開豐富的質地,細密氣泡帶來奶油感與優雅的伸展,尾韻帶著口水感的鹹鮮與悠長餘韻。這款酒體現了酒莊一貫的釀造工法:從精選舊世界頂級園地採收;在古灰岩、白堊土壤的涼爽氣候下成熟;瓶內長時間與酵母接觸,並在第二次放出(P2)時再度整體呈現成熟與能量的平衡。 飲用建議:冰鎮後先在杯中靜置約 10–20 分鐘再開飲,搭配海鮮、奶油派或微鹹起司最合拍。輕鬆享受它在口中從活力到深度逐漸展開的變化。

A P2 (Plénitude 2) expression from Dom Pérignon’s 2006 vintage: this release shows the rewards of extended time on lees. The nose opens with toasted brioche, white chocolate and delicate cotton-candy notes, then lifts with lemon zest, tangerine and bright pineapple core. Secondary and tertiary nuances—iodine, oyster-shell minerality and a light walnut/yeasty perfume—add depth. On the palate it is medium–full with a broad, expansive attack, crisp and incisive acidity and a fine pinprick mousse. The texture is creamy yet energetic, carrying a saline, mouthwatering finish that lingers with precise focus. Winemaking follows the house’s vintage-led philosophy: long sur-lattes ageing, careful second disgorgement for the P2 release and a restrained dosage to highlight tension and terroir. Grapes are sourced from top Champagne parcels with chalky, limestone-rich soils and a cool climate that preserves acidity and aromatic lift. Serve well-chilled, allow the wine to breathe briefly in the glass for 10–20 minutes, and pair with fine shellfish, soft cheeses or delicate starters to balance its richness and refreshing backbone.
