田百合一級園2018展現了夏布利那種乾淨俐落的礦感與鮮明酸度。酒香有柑橘皮、青蘋果與帶石感的硝石氣息,入口口感清爽但有厚度,酸度帶動果味向前,舌面有細緻的鹹礦質感,尾韻乾淨且延展。酒庄為家族經營,目前由 Vincent 與 Sébastien Dampt 領導,葡萄來自田百合的陡坡與石灰岩地層,採收細心、壓榨溫和,低溫發酵並在細泥渣上陳放以保留活力與口感層次。建議冰鎮後略微醒酒半小時左右,搭配海鮮或清淡奶油風味料理最合拍。
This Premier Cru from Les Lys (2018) shows the classic Chablis profile: precise citrus and green apple set against stony, flinty mineral tones. The nose opens with lemon zest, wet stone and a hint of white flowers; the palate is focused and vibrant — lively acidity lifts concentrated citrus and orchard fruits, while a saline, chalky finish keeps the impression fresh and persistent. Made by the family-run Domaine Daniel Dampt & Fils (now under Vincent and Sébastien Dampt), the wine is produced from carefully harvested parcels on Kimmeridgian slopes. Gentle pressing, cool fermentation and extended time on fine lees retain tension and delicate texture without excessive oak influence. Serve lightly chilled and decant briefly to open the aromatics. Ideal with shellfish, gently cooked fish and creamy seafood preparations.

The domaine works small, well-sited parcels in premier cru and village vineyards around Chablis, emphasizing careful vineyard work and gentle cellar handling. Grapes are picked by hand, pressed with care and vinified to preserve the site’s mineral expression and natural acidity, producing wines that are precise, terroir-driven and age-worthy.
