Tasting note: Bright citrus and green apple open first, followed by ripe pear and a hint of white blossom. Underneath sits a stony, saline minerality and gentle toast that lend complexity. The palate is medium-plus, lively with crisp acidity, a creamy mid-palate from lees ageing and a long, mineral-tinged finish. Producer notes: From Domaine Coche-Bizouard, a focused family domaine known for meticulous parcel selection in Saint-Aubin. Les Combes is a Premier Cru site where low yields and careful viticulture highlight the site's limestone character and pure fruit clarity. Winemaking: Grapes are hand-harvested and handled gently at the press. Fermentation takes place in French oak with a portion aged on fine lees to build texture; élevage is careful and measured to preserve freshness while integrating subtle oak influence. Vineyard notes: Les Combes sits on well-drained clay-limestone soils on mid-slopes, with cool nights that preserve acidity and delicate aromatics. Aspect and soil combine to produce wines with precision, mineral drive and a poised structure. Service: Best served lightly chilled (10–12°C). A brief 20–40 minute decant helps the aromatics to open. Excellent now through the medium term with proper cellar care.
