Tasting note

A classic Pommard from the Clos de Verger premier cru, the 2017 Fernand & Laurent Pillot shows concentrated red and black fruit layered with savory, forest-floor complexity. Aromas of wild cherry, plum and dried herbs lead to a palate of structured, firm tannins and lively acidity, with secondary notes of mushroom, leather and gentle spice from careful oak ageing. Produced by the family-run Pillot estate, vines are tended on steep, clay–limestone slopes in the Clos de Verger parcel, picked by hand at low yields to concentrate flavours. Fermentation is handled with respect for delicate extraction and the wine is matured in French oak barrels for balance and ageing potential. Drink now with a short decant to open up the layers, or cellar for further development through the late 2020s.
