The palate is silkily textured and mid-weight, offering concentrated red fruit, elegant acidity and finely grained tannins that build into a long, intense finish. Producer notes: From the respected family domaine in Volnay, this Premier Cru comes from the Les Caillerets climat—named for its small white limestone pebbles that bring lift and finesse. The team focuses on expressing terroir with careful vineyard work and low yields to concentrate flavour. Winemaking notes: Gentle extraction and restrained use of oak preserve purity of fruit; élevage in French oak (moderate new oak influence) gives spice and structure without overwhelming the wine. Minimal fining and careful monitoring through ageing ensure a polished texture. Vineyard notes: Les Caillerets sits on stony, calcareous soils with good sun exposure and natural drainage, producing wines of delicacy and minerality. Old vines and meticulous canopy management help achieve ripeness with balance. Serve lightly chilled (cellar temperature) after about 45 minutes decanting. Food pairing: roast duck, game birds, fillet steak, beef carpaccio or richer seafood preparations like scallops in a red-wine sauce.
