Crafted by the renowned oenologist Sylvain Pataille, this vibrant white wine showcases the untapped brilliance of northern Côte de Nuits. Sourced from five distinguished parcels on fragmented limestone scree, including vines planted as far back as 1949, it undergoes gentle pneumatic pressing, spontaneous fermentation with indigenous yeasts, and an extensive 18-month maturation in neutral and lightly toasted oak barrels on fine lees. The nose opens with notes of zesty lemon peel, green orchard fruit, and wet river stones, subtly layered with delicate touches of toasted almond and pastry. On the palate, a razor-sharp, energetic line of acidity cuts cleanly through a surprisingly creamy texture, culminating in a pristine, mineral-driven finish with unmistakable salinity. An expressive, authentic reflection of cool-climate terroir without excess oak or artifice.
