Tasting note: Bright, light-golden bubbles open to a fragrant mix of raspberries, red-berry compote and lemon shortbread, layered with toasted pastry, walnuts and a hint of acacia honey. On the palate it is bone-dry and tangy, with a creamy texture that balances lively citrus and pear fruit, finishing long and crisp with an autolytic, pastry-tinged thread. Producer notes: Crafted by Champagne Eric Taillet as a zero-dosage (Brut Nature) bottling, this cuvée showcases a high proportion of co-planted old-vine fruit. The house focuses on pure, terroir-driven expressions and precise cellar work. Winemaking notes: Made by the traditional method and disgorged in June 2024, the wine spends extended time on the lees to build creaminess and autolytic complexity. Zero dosage leaves the natural acidity and fruit forwardness clear; gentle handling in the cellar preserves freshness and aromatic clarity. Vineyard notes: Sourced from older, co-planted parcels that give concentrated fruit and a supple texture. The vineyards’ age and careful viticulture contribute to the wine’s intensity and vinosity while maintaining lively acidity. Serve chilled and allow about 10–20 minutes in the glass after opening to let aromas unfurl. Excellent as an aperitif and superb with rich shellfish, sushi with roe, or salty, crunchy snacks.
