Tasting note: Bright citrus lift meets toasty, nutty complexity — think lemon peel, toasted almond and subtle baking-spice from oak, underpinned by a chalky mineral streak and a long, expressive finish. Producer notes: From Famille Paquet’s Domaine des Valanges in the Mâconnais, made from organically tended old vines (plantings 1943–2009). Winemaking: Fermented and aged in oak casks for 12 months, followed by a further nine months in stainless steel to harmonize freshness and oak-derived texture. Vineyard: Vineyards sit on classic Saint‑Véran limestone and clay soils, giving that characteristic chalky energy and bright acidity. Serve slightly chilled; a short 20–40 minute decant opens the aromatics and softens oak edges. Great with roasted poultry, creamy starters or cheese.
