Sommelier's Notes: Deep, inky core with layers of ripe dark and red fruit, framed by cedar, clove and toasted oak. The palate is full-bodied and generous yet kept bright by fresh acidity; firm, elegant tannins unfurl toward an exceptionally long, saline finish. Winemaking favors long maceration (4–5 weeks), fermentation largely in large French oak vats with a minority in new barrels, followed by malolactic in new oak—resulting in a concentrated but refined profile.
Vineyard & Producer: From Clos Apalta's El Condor site (185–385m elevation, 70 km from the sea), 48 ha selected plantings on low-yield regimes and biodynamic/organic management deliver ripe phenolic maturity with balanced natural acidity.
