2022 M. Chapoutier Bila-Haut Collioure Chrysopee Blanc

Collioure

Soul Hook: Coastal Collioure freshness meets Chapoutier finesse.

Why choose it?
1) Terroir-driven intensity -> Concentrated Mediterranean minerality that lifts every sip.
2) Textured yet clean palate -> Lees ageing and gentle élevage give roundness without heaviness.
3) Versatile food partner -> From seafood to richer poultry, adapts to diverse dishes.

Sommelier's private notes: Bright citrus and white peach open the glass, followed by almond and delicate white florals. Underneath sits a saline, schist-driven minerality and a soft lees creaminess; acidity is vibrant, keeping the wine lively and focused. Best enjoyed slightly chilled after a short rest to let the layers settle.

Occasion (pairing guide): Ideal for weekend seafood dinners, a slightly fancier roast chicken, or as the smart pick for dinner guests when you want something impressive but crowd-pleasing.

Competitive Edge: Compared with big-name Rhône whites, Chrysopee offers distinct Collioure minerality and sea-salt lift at a fraction of the price—terroir character without pretension.
