Tasting note

品飲筆記:酒液呈深石榴紅,前段以成熟的黑果與紅果為主軸,黑莓、覆盆子與櫻桃香氣交織,帶有香料、黑胡椒與些許礦物感;尾段出現香草與果醬的溫暖橡木氣息。口感厚實但不笨重,層次分明,單寧細緻呈粉感,餘韻帶有香料與微甜烘焙風。 酒莊與葡萄園:出自家族經營的 M. Chapoutier(Michel 與 Marc Chapoutier),Les Varonniers 選用平均超過六十年的老藤,坐落於 Hermitage 山腳的東南向花崗岩坡與沖積台地——土地帶來緊緻的果味與礦物性。酒莊採取生物動力法管理,強調地塊表現與可持續精神。 釀造手法:以小型混凝土槽發酵,發酵期拉長約一個月以幫助單寧聚合,僅取自由流出汁,之後於橡木桶中熟成 14–18 個月(含部分新桶),造就果香與香草、烘烤木質感的平衡。 飲用建議:建議醒酒約 45 分鐘以釋放香氣與柔化單寧;可即飲也適合中期陳放。配餐喜歡烤羊、燉肉或帶些辛香的熟成芝士。

Tasting Note: Deep garnet in the glass, this wine opens with ripe red and dark berry aromas — blackcurrant, raspberry and dark cherry — layered with graphite, cured‑meat notes and a hint of black pepper. Oak-driven suggestions of vanilla and jam appear toward the finish. On the palate it is medium-bodied and ample, with fine, powdery tannins and a solid, driven core of fruit framed by spice and toasted wood. Producer & Vineyard: Crafted by M. Chapoutier (Michel and Marc Chapoutier), Les Varonniers is made from the estate's oldest Crozes‑Hermitage vines (average age over 60 years) planted on south‑east facing granitic slopes at the foot of the Hermitage hill and on nearby fluvial terraces. The estate follows biodynamic principles and parcels for this cuvée reflect concentrated, terroir‑driven fruit. Winemaking & Ageing: Fermentation is carried out in small concrete tanks with a long, month‑long fermentation designed to polymerize tannins; only free‑run juice is used. The wine is matured 14–18 months in oak casks with a proportion of new wood, giving structure and vanilla spice while preserving fruit integrity. Cellaring & Serving: Ready to enjoy now with 45 minutes of decanting to open up aromatics, but will reward medium‑term cellaring. Best drinking window per trade notes: 2023–2030. Serve at cellar‑cool to slightly cool room temperature (16–18°C).

The domaine works parcel by parcel to highlight site character, combining traditional vinification methods with careful oak ageing and an emphasis on low intervention in the vineyard and cellar.
