【Winemaker & Vineyard Notes】Owned and run by Matt Thomson and Sophie Parker-Thomson, the Holdaway site sits on young alluvial silts over sand. Fruit was machine-harvested at night to protect acidity, gently pressed in a pneumatic press and fermented cool in stainless steel. Post-fermentation rest on light lees increases texture before a gentle crossflow filtration and bottling under screwcap.

【Sommelier's Private Note】On the nose: seaside minerality, nettles and a lift of passion fruit and citrus peel. On the palate: an immediate zip of acidity, green melon and fresh herb notes (sage, basil), finishing saline and long. Medium-bodied and refined — great now, will keep clarity for several years.
