風味筆記:杯中色澤清亮偏琥珀,先以飽滿的梅香迎人,隨之有蜂蜜、杏乾與杏仁糖(marzipan)的甜香,再帶一絲橙皮的微酸提亮。口感圓潤且略帶黏稠感,甜度豐富但被清爽的酸度牽引,夾帶著花崗岩石感的礦質尾韻,回甘悠長且溫暖。

酒莊簡介:此酒出自 Kobori Shuzo(萬歳樂)家族釀造,位於加賀地區的傳統清酒與利口酒名家。酒莊一向重視手作和時間,保留果實原味的同時注重平衡與細節。

釀造過程:採用人工摘採的在地梅子浸漬於中性酒基中,以低溫長期熟成來抽出果香與糖分,過程中少做過多處理,僅以最溫和的方式過濾,保留自然黏稠的口感與香氣層次。

果園與風土:梅子來自加賀一帶的果園,土壤帶有花崗岩風化層,地質偏礫石且排水良好,沿海的涼爽氣候則幫助果實保留酸度與香氣,使成品在豐厚的甜感之外仍有清晰的輪廓與礦質感。建議冰鎮或加冰享用,口感更顯圓潤。


Tasting note: Bright, amber tones lead to an aromatic profile of ripe ume (Japanese plum), honeyed apricot, toasted almond and a hint of candied orange peel. The palate is lush and viscous with rounded sweetness balanced by a fresh, restorative acidity and a subtle granite-like minerality. Finish is long, sweet and gently warming.

Producer notes: Made by Kobori Shuzo under the Manzairaku label, this Kaga Granite Umeshu celebrates local fruit and terroir. The brewery is known for its careful craftmanship and respect for traditional maceration techniques, combining ripe orchard fruit with clarity and balance.

Winemaking notes: Hand-picked fruit is macerated in a neutral spirit base and aged to develop integrated aromas of honey and almond. Gentle maturation in cool cellars allows texture to build without overwhelming the fruit’s natural brightness; minimal filtration preserves aromatic depth and silky mouthfeel.

Orchard and terroir: Fruit originates from the Kaga area where granite bedrock and stony soils lend a distinct mineral thread. Cooler coastal influences encourage aromatic intensity and balanced acidity in the fruit, producing an umeshu that feels both generous and refreshingly precise.
