品飲筆記：酒色帶有成熟深寶石紅並在酒緣微見磚紅，香氣以深色果實為主，梅子與黑櫻桃先行，隨之而來的是雪松、煙草與細緻香草桶香，並有些許礦物與皮革氣息。口感圓潤飽滿，酸度平衡，單寧已趨圓滑但仍有結構感，尾韻帶有礦物與淡淡香料餘味，收束細長。 酒莊背景：慕林聖喬治位於聖艾美濃南坡，面對名莊，家族自1921年開始經營至今，對地塊與傳統工藝十分重視。園地坐落於有Fongaban溪流經過的石灰質坡地，自然排水良好，土壤與微氣候為酒款提供核心風味。 釀造與田間管理：人工採收、分地塊精選後以不鏽鋼槽進行傳統發酵，之後使用法國橡木新桶熟成以賦予香草與香料結構。葡萄園強調密植與細緻土壤管理，力求在田地裡提煉出集中且有礦物感的果實。 口感小提醒：已成熟但仍保留架構，倒酒前建議輕醒半小時到一小時，可讓香氣更開，適合搭配烤肉、紅燒或奶香風乾硬質起司。

Tasting Note: Medium-plus ruby with a touch of brick at the rim. Aromas of black cherry, ripe plum, cedar and tobacco unwind to reveal leather, graphite and a hint of vanilla from generous oak aging. On the palate it shows plush dark fruit framed by balanced acidity and silky, mature tannins, finishing long with an earthy, mineral thread. Producer Notes: A historic family estate opposite Château Ausone, in the southern slopes of Saint-Émilion. The property has belonged to the family since 1921 and benefits from a limestone slope nourished by the ancient Fongaban stream. Intense vineyard work and careful parcel selection are hallmarks of the estate. Winemaking Notes: Grapes are hand-harvested and sorted by plot, fermented in stainless-steel tanks and then aged in French oak (100% new barrels) to integrate structure and spice. The approach is traditional and precise, aiming to express the site’s clay-limestone minerality alongside refined oak influence. Vineyard Notes: The 8-hectare vineyard sits on clay-limestone slopes with excellent natural drainage. Planting density ranges from 5,500 to 12,600 vines/ha and the team emphasizes meticulous soil and vine management to concentrate fruit and terroir expression.
