品飲筆記:2016 年卡龍世家帶來濃郁但優雅的香氣層次,黑果與熟櫻桃為主調,伴隨雪茄盒、檀木、些許煙燻與紫羅蘭花香。口感飽滿,酸度清新,奶油般的中段質地與細緻、砂質般的單寧相互托出結構感,餘韻長且帶礦物感。 酒莊與田地:家族級酒莊、列為三級名莊,葡萄園鋪蓋厚厚的四紀礫石,下層為第三紀黏土,山頂礫石上另覆細薄湖相黏土,排水與蓄熱兼具,有利於果實成熟與礦物感發展。採收以人工為主,田間先行挑選,入廠再以震動篩選和手工精選確保品質。 釀造小記:採低溫控製不鏽鋼罐發酵,浸皮約 18–21 天以抽出結構,採用蛋清澄清並在法國橡木中熟成,使香氣與單寧更顯層次。整體風格兼具力量與優雅,適合陳放或早期開瓶醒酒享用。 享用建議:建議醒酒 1–2 小時再開瓶,配烤牛肉、烤羊腿或熟成起司最合適,亦可搭配風味濃厚的野味料理。

Tasting Note: Deep, elegant and concentrated — the 2016 displays a classic Saint-Estèphe profile with layers of blackcurrant and black cherry framed by cedary tobacco, graphite and violet florals. Secondary notes of black pepper, warm spice and mocha from careful oak integration add complexity. On the palate it is full-bodied with bright, refreshing acidity, creamy mid-palate texture and well-defined, grainy tannins that give structure without harshness. The finish is long, mineral-tinged and persistent. Producer Notes: The estate describes the Grand Vin as rare and authentic, balancing delicacy with intensity. This vintage expresses finesse and length together with excellent ageing potential. Vineyard & Harvest: Vines are planted on a thick layer of Quaternary gravel over predominantly Tertiary clay, with a fine lacustrine clay cap on higher gravel deposits. Grapes are hand-picked with an initial selection in the vineyard, then mechanically sorted by vibration followed by further hand sorting at the cellar. Winemaking & Ageing: Fermentation takes place in temperature-controlled conical stainless-steel tanks with maceration of 18–21 days. The wine is fined with egg white and matured in French oak (toasty, well integrated) to build structure and aromatic complexity. The result is a powerful yet refined wine that will reward medium- to long-term cellaring. Serving: Serve slightly below room temperature after decanting for 1–2 hours to allow primary fruit and tertiary aromas to harmonize. Ideal with robust roasted and braised red meats, game, and mature cheeses.

Château Calon-Ségur is a historic Médoc estate, classified as a 3ème Grand Cru Classé. Renowned for producing wines that combine depth with finesse, the property emphasizes terroir expression: gravelly soils over clay, careful manual harvesting and rigorous selection.
