On the palate it is fresh and sleek yet structured, showing concentrated mid-palate weight and a long, sappy, mineral finish. Producer Notes: From a boutique Valdeorras producer focused on expressive, low-intervention wines. The 2020 vintage displays the house’s signature balance of texture and clarity, delivering a wine that drinks beautifully now but can also reward short-term cellaring. Winemaking: Hand-harvested fruit is treated with minimal intervention in the cellar: native yeast fermentations, gentle extraction and careful ageing in neutral vessels and on lees to build texture without masking the varietal character. The approach emphasises freshness, saline minerality and a layered palate. Vineyard: Sourced from steep, well-exposed sites in Valdeorras where cool Atlantic influences and mineral-rich soils preserve vibrant acidity and give that flinty, stony backbone. Low yields and attentive viticulture bring concentrated, ripe flavors with a refined, savoury edge. Serve lightly chilled and consider a 20–40 minute decant to open the aromatics. Excellent with shellfish, lobster, grilled fish and a variety of Mediterranean tapas.
