Tasting note

品飲筆記:杯中呈現明亮金黃色,先是花香撲鼻:金銀花、橙花與玫瑰瓣,隨之而來的是檸檬皮、蜜餞芒果與成熟杏桃的果乾香。入口豐潤而不膩,蜜糖與橘皮果醬的甜感被清爽的柑橘酸度切割,並由薑、藏紅花與淡淡香草縈繞,收尾悠長且帶有微鹹的尾韻。 酒莊與葡萄園:出自歷史名莊 Klein Constantia,酒莊在近代復興,現由 Zdenek Bakala 與 Charles Harman 經營。每一區塊皆以手工管理,採收分多次進行,對每箱採果者編號回溯,嚴格篩選只留下最頂級的果實。 釀造與陳年:採收以多批次、逐粒挑選為原則,從高酸青果到自然風乾之葡萄均分開處理。冷浸皮接觸可長達兩週,輕壓入500公升橡木桶發酵,待自然停止(6個月至1年不等)。之後約18個月於500L桶(約五成新桶)陳放,再轉入大型桶繼續熟成,使甜度、酒精與酸度達到優雅平衡。 飲用建議:建議微冰鎮並提前約30分鐘醒瓶,能更好展現細緻花香與果味。搭配水果派、烤布蕾、鵝肝或陳年藍紋起司及堅果甜點,都能相得益彰。

Tasting note: Bright gold in the glass, this revered sweet wine opens with an immediately floral, perfumed bouquet — honeysuckle, orange blossom and rose — layered over citrus peel, dried mango and apricot. The palate is lush and richly textured yet lit by vibrant citrus acidity: marmalade and honeyed stone fruit ride a thread of ginger, saffron and gentle vanilla, finishing long and saline-sweet rather than cloying. Producer & vineyard: Made by Klein Constantia, a historic Constantia estate revived in the late 20th century and now managed by owners Zdenek Bakala and Charles Harman. Vineyard parcels are hand-managed and picked in numerous selective passes; every lug box is traceable to the picker to ensure premium fruit quality. Winemaking & ageing: Grapes are harvested in many successive passes — from lively, high-acid bunches to concentrated raisined berries used for the wine’s richest components. Individual batches are cold-macerated (up to two weeks), pressed into 500L barrels and fermented until the natural yeast stops, a process that can take six months to a year. The wine spends extended time in oak: roughly 18 months in 500L barrels (c.50% new) followed by further maturation in large foudres, creating balance between sugar, alcohol and bright acidity. Serve slightly chilled after a 20–40 minute open to release aromatics. Ideal with fruit desserts, richer custards, or boldly flavored cheeses; works beautifully alongside foie gras and nutty pastries.
