Tasting note: Pale golden with a persistent, fine mousse. Aromas of brioche, fresh lemon zest, ripe green apple and delicate white flowers lead into a palate that is creamy yet vibrant—hints of pear, honey and toasted biscuit frame a chalky, mineral finish. Producer notes: This is the signature non‑vintage cuvée, assembled from dozens of vineyard plots and reserve wines, matured for a minimum of three years on the lees to develop autolytic complexity. Winemaking: Crafted by traditional method with careful blending of base and reserve wines; unoaked aging preserves freshness while extended lees contact brings biscuit and brioche character. Dosage sits in the Brut range (around 8–9 g/L) to balance ripe fruit and acidity. Vineyard: Grapes are sourced from many villages across Champagne, including holdings in the Marne, Sézanne and Aube, giving a mix of ripeness and mineral tension that defines the house style. Serve very cold, enjoy as an aperitif or with shellfish, light starters and creamy desserts.
