品飲筆記:杯中先是青檸皮與青蘋果跳出,跟著白花、梨子與烤杏仁的香氣層層堆疊,口感有奶油般的圓潤中段,礦物感清晰帶來緊緻度,尾韻帶點鹹礦與細緻香草香,餘韻悠長。酒莊與田地:佩諾貝利卡專注普尼夢雪山一級園的風土呈現,園內石灰岩斜坡、排水良好,低產量與日夜溫差讓果實既成熟又保有酸度。釀造手法:手採入廠後以溫和壓榨,部分在法國橡木桶中發酵與熟成(含少量新桶),在泥渣上以適度攪拌豐富質地,但控制橡木使用以維持優雅張力。喝法小提醒:開瓶後靜置或醒酒約45分鐘,奶油感與礦物細節會更協調。搭餐建議:非常適合伴隨烤家禽、稍豐富的海鮮、煙燻鰻或帶有堅果風味的乳酪。


Tasting note: Bright citrus and pear aromas open the glass, layered with white flowers, toasted almond and a discreet vanillin spice. The palate shows lively lemon zest and green apple framed by a creamy mid-palate, chalky minerality and a long, saline finish—elegant yet concentrated. Producer notes: From Pernot-Belicard’s Champ Canet premier cru parcel, this 2020 is made to express site precision and aging potential. Winemaking notes: Grapes are hand-harvested, given gentle pneumatic pressing and fermented in French oak (a portion in newer barrels). The wine is matured on fine lees with judicious bâtonnage to build texture while retaining freshness. Vineyard notes: Champ Canet’s limestone-rich soils and well-drained slopes deliver clear mineral drive and restraint; low yields and cool nights in 2020 concentrated flavors while preserving acidity. Best enjoyed after a short rest in the glass or decanted for about 45 minutes. Food pairing: pairs superbly with roast poultry, richer seafood, smoked eel and nutty cheeses.
