2021 Veneti Amarone Valpolicella Classico Collezione Pruviniano DOCG
品飲筆記:酒色深沉,帶紅寶石至石榴色調;香氣濃郁,以果乾(梅子、無花果)與成熟黑櫻桃為主,伴隨烘烤橡木、可可、煙草與甘草的層次。口感飽滿厚實,酒精暖融,單寧圓潤且有支撐力,果乾與烘焙香料交織,收尾長且帶些微鹹香。
酒莊與產區:普魯維尼安系列源自 Valpolicella Classica 的 Marano 谷地,這塊地自中世紀即以「Pruviniano」著稱。Domini Veneti(由 Cantina Valpolicella Negrar 所擁有)以此系列突顯當地風土的濃郁與結構感。
釀造方式:9–10 月人工採收,挑選優良果穗後放入乾房風乾至 12–1 月(appassimento)。二月初去梗破碎,溫控發酵 12–23°C,緩慢浸皮約 30 天(其中 12 天低溫處理),每天手工踩皮打帽三次,完成乳酸發酵後入木桶陳年,再瓶陳自然穩定。
葡萄園與栽培:葡萄來自 Prognol 的乾燥梯田,海拔約 200–250 公尺,朝向東南至西南,土壤為粉質黏土帶些白堊成分,田間有覆草管理,栽培方式包含直立栽培與傳統維羅納棚架,株密 3,300–5,000 棵/公頃,產量低(約 20 hl/ha),酒體因此濃縮有力。
適飲建議:醒酒約 60–120 分鐘;配紅肉、野味或成熟硬質奶酪最為合拍。
Tasting Note: Deep garnet in the glass, this Amarone opens with concentrated aromas of dried plum, ripe black cherry, fig and cocoa, overlaid with toasted oak, tobacco and a hint of licorice. On the palate it is powerful and full-bodied, with velvety, ripe tannins and a warm alcohol presence that supports layers of dried fruit, dark chocolate and baking spice. The finish is long and toasted, with lingering savory and dried-fruit echoes.
Producer Notes: The Pruviniano Collection highlights grapes from the Marano valley in the Valpolicella Classica area — an historic territory once called “Pruviniano”. Crafted to express this micro-terroir, the wine showcases structure, depth and a classic Amarone intensity.
Winemaking: Hand-harvested from September to October with an exclusive selection of grapes. Clusters are dried in the drying room through December/January (appassimento). Crushing and de-stemming in early February is followed by controlled-temperature fermentation (12–23°C) and a slow maceration of about 30 days (12 days cold), with manual punch-downs three times daily. Full malolactic fermentation is completed. The wine is aged in wood, then in bottle, with natural stabilization.
Vineyard Notes: Vines come from dry terraces in the hamlet of Prognol, Marano, at 200–250 m altitude with southeast–southwest exposure. Soils are silty-clay, sometimes calcareous, with grassy inter-rows. Training is espalier and Veronese pergoletta; producing vines average 15 years old with a planting density of 3,300–5,000 vines/ha and low yields (~20 hl/ha), all contributing to concentrated fruit and structure.
Winery: Domini Veneti, under the ownership of Cantina Valpolicella Negrar, produces the Pruviniano Collection to celebrate the character of Marano’s vineyards. The estate balances traditional Amarone techniques with careful cellar control to produce wines with ripe texture and aging potential.
