侍酒師私房筆記:2013 年天氣多變,但正因如此入桶的果實更集中。倒入杯中是深寶石紅,先聞到黑醬果與黑櫻桃,慢慢散出甘草、森林地衣與雪茄盒的香氣;再醒一會兒會冒出朱古力、咖啡與香草烘烤感。入口清新而扎實,中段飽滿,單寧細緻卻有支撐力,尾韻帶鹹感礦質與黑巧克力餘味,收得長。

田地與釀造:酒莊位於 Plateu de Mouton 的礫石高地,植株密度高、平均老化約四十年。2013 年9月底至10月初採收,精挑細選後以法國橡木桶熟成18個月,追求結構與優雅並存。

場景化配餐:在香港,可配酒店牛扒、燒羊架或 Beef Wellington;家庭聚會上與滷味牛腩或老派芝士拼盤都很合拍。建議醒酒一小時以上,溫度控制在16–18°C。

Winemaker & producer notes: From Château Mouton Rothschild, a vintage of contrasts; a late, compact harvest yielded a wine of saturated colour and concentrated personality. Coaxing out the best from a small selection, the wine spends 18 months in French oak to refine tannins and add savory oak spice.

Tasting note (sommelier): Deep ruby-purple in the glass. The nose opens with layers of black fruit — crème de cassis and black cherry — then unfurls licorice, forest floor and cedar. With airing, mocha, vanilla and delicate roasted notes appear. On the palate it enters fresh and clean, builds mid-palate weight with firm yet polished tannins, and finishes long with lingering dark chocolate and mineral echoes.

Winemaking & vineyard: Harvested between 30 Sept and 9 Oct after a capricious season, the fruit was selected tightly and aged for 18 months in French oak. The estate sits on a gravel plateau with deep, free-draining soils and a dense planting that favours concentration and longevity.

Occasions & pairing: Decant 60–90 minutes and serve at 16–18°C. Ideal for milestone dinners: Cantonese-style roasted beef, steak for two at a hotel, celebration roasts, or a chef’s table with mature cheeses.
