Au Pied du Mont Chauve is a small, terroir-focused producer working parcels in Chassagne-Montrachet. Vines are managed to favor balance and ripeness; yields are controlled and fruit is picked at ideal ripeness. Fermentation is mostly in stainless steel with a portion aged in well-seasoned oak to lend texture rather than overt oak influence. The team emphasises gentle handling—whole-cluster pressing where appropriate, cool fermentation, and attentive batonnage to build mouthfeel. The Clos Saint-Jean parcel contributes stony minerality and a concentrated mid-palate.
