Tasting note

品飲筆記：杯中先是明亮的紅、藍果香，慢慢轉為野莓花香與森林的潮濕泥土感，帶著彈性的樹脂香和些許香料。入口果實濃郁但不膨脹，酸度帶動整體節奏，單寧細緻滑順，尾韻有淡淡煙燻和海鹽感，收尾優雅且持久。 酒莊與產區：空白畫布酒莊由 Matt Thomson 與 Sophie Parker‑Thomson 經營，重視小地塊與產地表現。此酒來自 Omaka 山谷一塊朝北的山坡小地塊，土壤為風積淺層粉砂覆蓋黏土壤，密植、瓜架式管理，2009 年栽種並取得 BioGro 有機認證，田間管理以細緻和可持續為主。 釀造手法：採分批手採，約三分之二以整串入桶，三分之一去梗輕踩入開放式發酵槽。低溫浸漬後自然發酵約 15 天，期間人工踩帽，之後入法國小桶完成天然乳酸發酵，使用 100% 法國橡木小桶熟成 12 個月（35% 新桶，低烤度），再於罐中靜置 3 個月後裝瓶，瓶口為旋蓋封口。 口感建議：建議醒 30–60 分鐘再享，適合搭配鴨肉、油脂較豐的魚類、帶香料或些微鹹味的料理。整體風格兼具力量與優雅，適合想要果味與土壤氣息並重的飲用者。

Tasting Note: Aromas of ripe red and blue fruits lead, followed by wild berry perfume, forest-floor savouriness and sappy, aromatic spice. On the palate the wine shows concentrated fruit density, fine polished tannins, a fresh saline lift and a subtle smoky oak thread, finishing long and poised. Producer Notes: This is the second release from the Settlement single-vineyard. Owners Matt Thomson and Sophie Parker‑Thomson focus on expressing site purity — rich yet precise, with an emphasis on structure and length. Winemaking: Two‑thirds whole clusters and one‑third destemmed fruit underwent cool pre‑soak then a 15‑day open‑tank fermentation with hand plunging. Wine completed natural malolactic in barrel and was matured for 12 months in 100% French oak barriques (35% new, low toast) before a gentle 3‑month tank settling. Screwcap closure. Vineyard: The fruit comes from a small, north‑facing hillside parcel in the Omaka Valley (Southern Valleys). High‑density planting on wind‑blown loess over clay loams, cane‑pruned and VSP trained. The block is BioGro certified and farmed organically, delivering concentrated, clean fruit with mineral purity. Vintage & Ageing: A warm spring and a dry but moderate summer produced excellent fruit purity and balance in 2020. Drinking window: 2023–2030. Best enjoyed after a short decant to let aromatic layers open.
