品飲筆記:酒體呈深緋色,香氣複雜,黑醋栗、卡西斯和黑櫻桃為主軸,伴隨雪茄盒、煙草、岩石礦感與甘草的細緻氣息,還有一抹地中海灌木的野性。口感紮實卻不粗糙,單寧細緻而有支撐,酸度帶來清爽的輪廓,黑果實與礦物質的乾澀感相互交織,尾韻香料感悠長。 酒莊與田間:這款酒來自聖朱利安頂級礫石陵脊,黏土與礫石底層賦予排水和儲水的理想平衡。葡萄園以傳統犁作管理,不用除草劑,注重土壤健康與根系發展,產出的果實結構緊湊、風味集中。 釀造重點:全部人手採收,去梗分選後置於恆溫木質發酵槽釀造,發酵與浸皮處理以尊重果汁為原則,浸皮約三週。之後分批入法國橡木桶熟成16–18個月(約六成新桶),酒體在橡木與果實之間取得均衡。 飲用建議:若當下飲用建議醒瓶一小時,搭配帶滋味的紅肉或熟成硬質乳酪最合適。
Tasting Note: Deep, vermilion-hued core with a complex nose of blackcurrant, cassis, tobacco, cedar and graphite, edged by subtle garrigue and liquorice. The palate is concentrated and classically structured — firm, refined tannins supporting layers of dark fruit, mineral extract and savoury spice. The finish is long and lingering, promising further refinement with cellaring. Producer & Vineyard: From a prime Saint-Julien hilltop of Garonne gravel with clay-gravel subsoils, the estate is traditionally ploughed and farmed without herbicides. Vines are predominantly Cabernet Sauvignon with supporting plantings, delivering grapes of concentrated purity and balance. Winemaking & Ageing: Harvested entirely by hand, bunches are destemmed, meticulously sorted and fermented in thermo-regulated wooden vats. Maceration runs about three weeks with careful, measured extraction; the wine is aged 16–18 months in French oak (approximately 60% new) in cellars held at 15°C. The result is a classic, oak-integrated Bordeaux with strong aging potential. Serving: Best opened and decanted for about an hour if drinking now to allow the tannins to relax. Serve with richly flavoured red meats or mature cheeses.
