【侍酒師私房筆記】2016 的黑色果實很成熟,鼻子有咖啡、黑巧克力、煙熏和雪茄盒那種乾香。入口先是甜潤,之後被粉狀、絲滑的單寧收束,酸度來自夜間涼爽的果實,令整體鮮明不沉悶。醒 90 分鐘會更開;愛收藏的話它又能耐得住時間。

【田地與釀造】那年冬春雨多、夏季偏乾,九月中段的雨反而幫助了成熟期;十月收成前無雨,晝暖夜涼帶出色澤與清晰度。採用受控發酵,約18個月法式橡木桶陳年,烘槍、雪松與細緻桶味和果實融合良好。

【Sommelier's Private Note】On the nose there’s ripe black fruit layered with cigar-box, coffee and dark chocolate. The palate opens broad and generous, then tightens into a grainy, silky tannin frame—no aggression, only tensile power. Fresh night-time acidity lifts the fruit; the finish is long, mineral and spicy. Best decanted 90 minutes if drinking now, or cellar for graceful evolution.

【Winemaking & Vineyard】Fermentation is carefully temperature-controlled; the wine spends c.18 months in oak, allowing spice and cedar to integrate. Despite a challenging winter and a dry summer followed by helpful September rains, the exceptional terroir produced fully mature, concentrated grapes and wines with freshness and colour.
