[Sommelier's notes] Pour after 45 minutes decanting. Aromas of ripe red cherry and wild strawberry give way to rose petal, warm spice and a cool iron/mineral thread. The palate is medium-bodied with lively acidity, polished fine-grained tannins and a persistent, savory finish—great now for roasted birds, even better with a few years in bottle.

[Winery notes] Domaine Nicolas Rossignol works with low yields and gentle sorting to preserve site purity. Fermentation is traditional with punctual extraction to keep finesse; élevage in seasoned barrels adds texture rather than overt oak.

[Winemaking notes] Whole-bunch inclusion used sparingly to lift aromatics; fermentation native-yeast led, moderate maceration and ageing in predominantly neutral to lightly toasted oak for structure and balance.

[Vineyard notes] Santenots sits on clay-limestone slopes offering natural drainage and a mineral backbone. South-east exposure gives ripe aromatics while retaining natural acidity.
