品飲筆記:這支酒一開瓶便氣勢十足,黑莓、野藍果與黑醋栗的深色果實香氣層次分明,夾帶黑櫻桃、甜菸草與甘草的香調,還有淡淡花香提神。酒體飽滿,單寧扎實而細膩,酸度支撐良好,尾韻綿延悠長。 酒莊與產地:來自坐落於達歐山脈的莊園,海拔與日夜溫差為葡萄賦予濃縮風味與清晰結構。家族式經營與對山坡地塊的精準挑選,讓每一瓶都有層次與陳放潛力。 釀造工藝:在法國新桶中陳放22個月,新橡木的香草與烘烤香與果味已經融合,呈現力量感但不失平衡。建議醒酒約90分鐘,溫度控制在16–18°C,搭配紅肉或慢燉菜色最對味。
Tasting Note: A blockbuster, full-bodied wine that bursts from the glass with layered black fruits — blackberry, blueberry and black currant — framed by dark cherry, sweet tobacco, licorice and a violet floral lift. Rich, concentrated and surprisingly poised, the palate is dense with ultra‑ripe phenolics but balanced by measured acidity and a long, resonant finish. Producer & Vineyard: Crafted on DAOU Mountain, this wine reflects high-elevation terroir and meticulous site selection. The estate’s volcanic-influenced soils and cool nighttime breezes promote concentrated flavors and refined tannin structure. Ownership and winemaking are family-run with a clear focus on mountain expression and longevity. Winemaking & Ageing: Fermented and aged for 22 months in 100% new French oak, the wine shows integrated toasty oak, vanilla and cedar notes alongside dense fruit. The result is a structured, powerful wine built for medium- to long-term cellaring; it will continue to unfold over the next two decades. Serving: Decant about 60–120 minutes (90 minutes recommended) to allow open floral and tertiary notes to emerge. Serve at 16–18°C. Pairs beautifully with rich red meats, slow-roasts and mature hard cheeses.
