Tasting note

風味描述:深色寶石紅,散發黑櫻桃、黑莓與深色果實的濃郁果香,層次中帶有香草、咖啡摩卡與乾燥香草的細緻氣息。口感飽滿,果實濃郁而集中,夾帶石墨、老橡木、黑橄欖與泥土礫石的礦物感。單寧結實、有力但經過拋光處理,入口既有力度也不失優雅,尾韻悠長且帶一點鹹礦質感。 酒莊與田地:達歐(DAOU)家族在Paso Robles的莊園,座落於具有海洋調節的高地與山坡,土壤排水良好,日夜溫差讓果實成熟集中但保留鮮明酸度。酒莊以精耕細作的園藝管理聞名,追求地塊風土與品質穩定性。 釀造重點:人工採收與嚴格篩選,發酵與浸皮以萃取結構與色澤;之後在橡木桶中陳年以增添香料與口感細緻度。整體釀造朝向力量與細緻兼備的方向,適合陳年收藏。 建議:建議醒酒一小時左右,搭配烤牛肉、燒烤或陳年硬質起司更能襯托層次。

Tasting note: Deep, inky ruby with an intense bouquet of black cherry, blackberry and blackcurrant, layered with vanilla, mocha and dried herbs. The palate is full-bodied and concentrated: bold dark-fruit core framed by graphite, cedar, black olive and earthy loam, while oak-driven spice and coffee notes give complexity. Tannins are firm and gripping yet polished, carrying a long, mineral-tinged finish. Producer & vineyard: From DAOU’s estate holdings in Paso Robles, this is a classic estate expression built for structure and aging. The team led by the Daou family focuses on mountain/estate sites with cooling coastal influence, producing grapes with ripe concentration and bright acidity. Winemaking: Hand-harvested fruit received careful sorting, fermented to extract depth and structure, then matured in oak to integrate spice and texture. The wine shows meticulous extraction and élevage to balance power with polish. Cellaring: Built to develop over time—drink from the mid-2020s through the mid-2040s for peak evolution. Best served with 60–90 minutes of decanting to reveal its aromatics and soften youthful tannins.
