品飲筆記：酒體深沉，開杯立刻帶出黑莓果醬、李子與藥草香，煙草盒與丁香的木質香氣交織其間，還有一絲紫羅蘭的花香。口感飽滿而集中，黑色與紅色果實豐厚，伴隨石墨感與香料尾韻。單寧結實但打磨得圓潤，酸度活躍使整體保有清新感，收結悠長且層次分明。 酒莊與釀造：達歐家族在帕索羅布爾斯的高地建立了以風土為本的酒莊，這款珍藏系列屬於嚴選的小批次作品，由釀酒師掌控每一個細節：精選成熟果實、適度浸皮以抽出結構與香氣，之後入法國橡木桶長期熟成，讓單寧和香草、烘烤氣息融合而不搶果味。 葡萄園環境：果園位於高海拔山脊，土質石質且含鈣化層，晝夜溫差大，日照充足但晚間受海風降溫，有利糖酸平衡與香氣累積。採收以人工分級，減產管理確保每串果實的濃縮度與風土表現。 喝法與搭配：建議醒酒一小時以上再飲，或與烤牛排、燒烤羊排、野味及成熟硬乳酪搭配。整體感受有力量但不失優雅，適合喜歡層次豐富與陳年潛力的飲家。

Tasting Note: Deep, expressive aromatics open with blackberry compote, clove spice, cigar-box and violet perfume. The palate is concentrated and full-bodied, delivering layers of blood plum, blueberry and subtle graphite framed by seamless, polished tannins and lively, well-integrated acidity. Elegance and freshness balance the power — long, stylish finish. Producer Notes: From DAOU's Reserve program, this wine represents small-lot selection from the estate. Under the leadership of Winemaker Daniel Daou and owner Georges Daou, the Reserve wines are crafted to reflect the mountain terroir and aging potential of the site. Winemaking Notes: Made in small batches with careful extraction and extended maceration to build structure and complexity. Fermentation and rackings were managed to preserve fresh fruit and spice, followed by extended aging in French oak barrels to add depth, toast and fine-grained tannin. Bottled after careful blending and maturation. Vineyard Notes: Fruit is sourced from the higher-elevation estate vineyards in Paso Robles — characterful soils with calcareous and rocky profiles, marked diurnal temperature swings and cooling coastal influence. Low-yield, hand-harvested lots and meticulous canopy management produce ripe concentration with balanced acidity and pronounced minerality. Cellaring & Service: Ready to enjoy now with decanting; will age gracefully over the next decade. Serve slightly below ambient cellar temperature after decanting.
