品飲筆記:打開瓶塞,首先撲鼻而來的是雪莉桶的果乾香——無花果、葡萄乾和橘皮,接著有皮革、煙草與一抹爐火煙燻。入口厚實油潤,太妃糖、黑巧克力與溫暖香料逐步堆疊,橡木單寧帶出些許苦甘,收尾悠長且回甘。 酒廠故事:輕井澤的原桶酒款向來稀少珍貴,這支36景(31景)出自信州諏訪湖附近的高地蒸餾所,當年產量有限,關廠後更成為收藏指標。 釀造與陳年:以雪莉風味的橡木桶為主力熟成,木桶帶來濃郁果乾、堅果與香料調性;低溫緩慢熟成讓酒體更飽滿、層次更細緻。 田園與地理:蒸餾地坐落於海拔較高的山區,涼爽氣候延緩反應,讓酒和木頭有更多時間對話,風味因此沉穩而集中。 飲用建議:建議醒約15分鐘,使用郁香杯或小口慢飲;也可加一點點純淨水,會釋放出更柔和的甜香與香料層次。輕鬆品嚐,亦適合收藏。
Tasting Note: A richly layered single malt that opens with a perfume of sherry-aged dried fruits — figs, raisins and orange peel — entwined with leather, tobacco and a hint of campfire smoke. On the palate it is dense and oily: toffee, dark chocolate, baking spice and a deep resinous oak core, finishing long, warm and slightly bitter with lingering cedar and spice. Producer Notes: From the famously elusive Karuizawa stock, this 36-views (31 view) bottling hails from the high-altitude Shinshu region near Lake Suwa. Karuizawa distillery, now closed, produced small, robust cask-strength whiskies which have become collectors' icons. Winemaking / Distillation Notes: Matured predominantly in sherry-seasoned oak casks, the spirit shows concentrated fruit cake and nutty notes balanced by toasted oak and spice. Bottled without dilution for powerful aromatic drive and palate depth. Vineyard / Site Notes: Distilled at a cool, elevation-influenced mountain site in central Japan, the original grain spirit benefited from slow maturation in cool cellar conditions, allowing complex interaction between spirit and wood. Serve: Pour and rest for about 15 minutes to let the top notes open. Serve neat or with a splash of still water to reveal sweeter spice layers. Best enjoyed in a tulip glass to concentrate the aromatics.
