【Winemaking & Vineyard】Hand-picked in multiple passes from individually managed blocks to capture a range of ripeness and acidity. Grapes were cooled and brought in during the early hours; the final wine was crafted from careful fermentations and three years' maturation in 50% new French oak, acacia and large foudres before blending and bottling.
