侍酒師私房筆記:倒出來是紅寶石色帶亮邊,先聞到玫瑰和紫羅蘭的花香,接著是黑櫻桃、覆盆子,還有甘草與甜煙草。入口厚實但不笨重,單寧細緻如絲,礦物感與香料把整個口腔拉長,最後有松露、可可的餘韻。整體層次分明,適合慢慢品。

生產與田地:葡萄以人工採收(10月8日),在55hl 橡木發酵槽中以柔和方式浸皮約20天,完成桶內乳酸發酵後在中型橡木桶熟成,產區為石灰粉砂與砂質礦物豐富的土壤,貧瘠但微量元素多,這正是它緊實礦感的來源。

場景化配餐指南:建議醒 60–90 分鐘,溫度 16–18°C。香港的中秋烤羊、週末老饕級意粉配牛肝菌,或與陳年硬質芝士同享都很合適。

Sommelier Notes: Colour glows ruby with bright edges. The nose opens to floral notes of rose and violet layered over dark cherry, ripe raspberry, licorice and sweet tobacco. On the palate it’s enveloping and focused — broad, refined tannins sweep across a full-bodied frame while a fine mineral thread and spice keep everything poised. The finish is long, with echoes of truffle, cocoa and a saline mineral lift.

Winemaking & Vineyard: Manual harvest (8 October). 20-day fermentation on skins in 55hl oak vats with a gentle wetting system, malolactic in vat. Aged roughly two years in medium-sized oak casks before bottle refinement. Vineyards sit on Tortonian and Helvetian calcareous marl with over 30% sand — poor in organic matter but rich in iron and magnesium, giving the wine its tension and mineral backbone.

Occasion: Decant for 60–90 minutes and serve at 16–18°C. Excellent for a special Cantonese roast dinner, a cosy Western-style lamb night, or elevated pasta with porcini. Pairs beautifully with aged hard cheeses.
