Sommelier's note: On opening you find concentrated blackberry, plum and blackcurrant, wrapped in cedar, graphite and a hint of tobacco. Firm tannins and lively acidity give chew and lift—best decanted for an hour to soften edges. Serve with a charred ribeye or slow-braised beef; it stands up to bold sauces yet keeps elegance.
