The fruit is carefully hand-harvested from historic, slate-soil vineyards and subjected to gentle cool fermentation with extended lees contact in traditional wooden casks and stainless steel. This crafting technique bestows a tantalizing creamy texture while maintaining a sharp, limestone-and-slate freshness. Aromas of crisp white orchard fruit, green apples, and wet stone minerality burst from the glass. On the palate, crisp citrus acidity is seamlessly balanced by subtle botanical nuances and a clean, long, mineral-driven finish.
