Tasting note

品飲筆記:酒色深邃帶紅寶石邊緣,香氣立體,黑櫻桃、黑李與野莓打底,伴隨乾燥花香、橙皮與岩石感的礦質,還有細緻的香料氣息(肉桂、肉豆蔻)與一絲草本與野味。入口中等偏飽滿,果實與鹹香、草本織成層次,單寧細砂般緊緻但不粗糙,酸度清新,收尾帶有悠長的鹹香與香料餘韻。 釀造與桶陳:釀酒師加入約40%整串發酵以增添香氣與莖皮香料層次,發酵保留了果香與鹹香平衡。酒液在法國橡木桶陳約11個月,其中約26%為新桶,最後以旋蓋封瓶以保持新鮮度與純淨度。 葡萄園與生產:來自本迪戈(Bendigo)產區,屬高日夜溫差、土壤排水良好的山坡園地,成熟期延長讓風味更集中、單寧細緻。酒莊採低產量和精細園藝管理,強調產地風土與酒體質地。 飲用建議:現在飲即可感受活力,但也有發展空間,未來五到十年內仍有良好表現。建議醒酒30–60分鐘後飲用,溫度約15–17°C最理想。配餐推薦烤鴨、野味、紅燒或香料味較重的肉類,以及風味濃郁的亞洲料理。這款酒口感細膩、香氣層次豐富,適合想要同時享受果味與鹹香結構的餐桌。

Tasting note: Deep ruby with a lively rim. The nose opens to focused dark-fruit aromas — black cherry, plum and blackberry — woven with dried florals, orange peel and a smoky, flinty thread. On the palate it is medium–full, layering ripe dark fruit with savoury herbs, spice (cinnamon, nutmeg) and subtle gamey lift. Dusty, tightly grained tannins give structure while fresh acidity keeps the palate energetic toward a bold, savoury finish. Winemaker notes: Crafted with a measured whole-bunch inclusion (approx. 40%) to add aromatic lift and stem-derived spice, fermentation retained lively primary fruit and savoury complexity. The wine was matured for c.11 months in French oak, with roughly a quarter in new barrels, then bottled under screwcap to preserve freshness and clarity. Vineyard notes: Sourced from the Bendigo subregion in Central Otago — cool nights, strong diurnal range and stony, free-draining soils encourage slow ripening and concentrated flavour. Low yields and careful canopy management produce grapes with ripe flavours, refined tannin and bright acid balance. Producer background: From Valli Wines, a boutique Central Otago producer focused on site expression and small-batch winemaking. Their Bendigo bottlings are notable for precision, regional character and an emphasis on texture and savoury detail. Cellaring & serving: Drinking beautifully now but built for short- to medium-term aging (peak through the next decade). Decant for about 30–60 minutes to open aromatics. Serve at 15–17°C. Recommended pairings include roasted duck, game, grilled red meats and richer Asian dishes.
