2021 Two Hands Shiraz Bella's Garden Barossa

品飲筆記:深沉的黑果香帶出黑莓、李子與深櫻桃,伴隨黑胡椒香料、煙燻香草與可可的暖調。口感濃郁飽滿,單寧結實但經過細緻打磨,餘韻厚實悠長。
酒莊與產地:來自酒莊於巴羅薩西部紅棕色土壤的精選酒桶,這裡土質瘦、產量低,讓果實更集中、風味更厚實,酒色也帶有特有的赤土感。酒莊講究以園區特性打造風格一致的優質酒款。
釀造工藝:使用5–10噸的開頂發酵槽發酵,整個發酵期間每日翻桶兩次,浸皮7–10天後壓榨入桶,桶內完成乳酸發酵。以法國大桶陳釀18個月(15%新桶,其餘1–6年桶),裝瓶時不澄清、不過濾,保留質地與層次。
飲用建議:現在即可飲用,也適合陳年收藏(建議飲用期 2023–2033)。建議醒酒1–2小時,溫度稍低於室溫能讓果香與香料層次更分明。


Tasting Note: Deep, vivid core of black fruit—blackberry, plum and dark cherry—framed by black pepper spice, smoked vanilla and a touch of dark chocolate. Plush and concentrated on the palate, with muscular yet refined tannins and a broad, lingering finish.
Producer & Vineyard: Sourced from Two Hands’ finest Barossa barrels, predominately from the red/brown earth of the western ranges where low-yield soils produce intense, concentrated fruit and a distinctive red-hued expression. The site yields wines with power and structure while retaining aromatic finesse.
Winemaking & Ageing: Fermented in 5–10 tonne open-top fermenters with regular pump-overs and 7–10 days on skins before pressing. Malolactic fermentation completed in barrel. Aged 18 months in French oak hogsheads (15% new, remainder 1–6 years old). Bottled unfined and unfiltered to preserve texture and complexity.
Cellaring & Service: Ready to enjoy from now but will reward careful cellaring through the decade (drink 2023–2033). Decant for 1–2 hours to open the aromatics and soften the tannic frame. Serve slightly below room temperature.
