田地與釀造:葡萄來自海拔約250米的紅棕色壤土蓋石灰層,藤齡約22年,產量控制後果實濃縮。採收後進行去梗入開頂發酵槽,常規打皮,平均9日皮浸,全部自由流汁與壓榨合併,24小時後入300公升法國橡木大桶完成乳酸發酵,裝瓶前僅做最少澄清、不過濾,保留口感厚度。

Sommelier's Notes: Deep garnet in the glass, this wine opens with saturated black cherry, blackberry compote and a hint of plum paste. Mid-palate delivers baking spices, black pepper and dark chocolate underpinned by toasted French oak. Tannins are present but polished by time; the finish is long and mouth-coating, with an earthy mineral whisper. Best decanted for an hour to let the secondary tertiary notes settle.

Winemaking: Selected parcels were crushed and de-stemmed into open-top fermenters with regular pump-overs, nine days on skins and careful blending of free-run and press fractions. After 24 hours the lots went to 300-litre French hogsheads for full malolactic completion; bottled with minimal fining and no filtration to preserve texture.

Vineyard: Sourced from Seppeltsfield, 22-year-old vines on red/brown loam over limestone at 250m altitude with moderate rainfall — concentrated fruit and savoury minerality from well-draining soils.
